DARK CHOCOLATE COCONUT BALLS

My inspiration for these chocolate coconut balls came from my new favourite chocolate bar, I’m sure you can guess which one! I didn’t like bounty bars as a kid, until recently it was my least favourite pick in a celebrations tub… A few months ago my sister made me try one and I’ve been hooked ever since. So I thought to myself, why not make my own version as some ultimate huge chocolate coconut balls!  These balls can be quite rich, so it’s up to you what chocolate you want to use and what size you want to make them. But if you’re like me and can fully indulge your sweet tooth, go fully in and use the dark chocolate and white chocolate! And make them big! But if you’ve not got a huge sweet tooth then  I’d suggest maybe make them a bit smaller and maybe use milk chocolate as a coat instead of dark.

First of all, get your desiccated coconut and add to a bowl with condensed milk and your melted white chocolate.

Mix this all together and roll into balls (size of your choosing). Place these in the fridge to cool for about 10-15 minutes; this will make them stick together better and will make applying the chocolate coat easier.

Once you’ve let them chill, take them out of the fridge and melt your dark chocolate. Cover the balls in dark chocolate and decorate with some extra desiccated coconut sprinkled on top.

Makes 18 – 36 (based on size)

Ingredients

  • 300g desiccated coconut
  • 1 can of condensed milk (396g)
  • 100g white chocolate
  • 650g dark chocolate ( you might use less)

Method

  1. Melt your white chocolate
  2. Add your desiccated coconut, condensed milk and melted white chocolate to a bowl and mix
  3. Form the mix into balls of a size of your choice and place on some baking paper
  4. Place the balls into the fridge to cool for 10-15 minutes
  5. Melt the dark chocolate in a bowl
  6. Take each ball and dip into the bowl of dark chocolate, covering each ball
  7. Sprinkle desiccated coconut on top of the ball to decorate
  8. Place the balls one by one onto a grilled shelf whilst you cover the rest in chocolate
  9. Place in fridge until the chocolate cools
  10. Eat!
