CHEDDAR AND FIG TOASTIES

I devour cheese with fig any time I see it on a cheese board! That mild sweetness goes so well with strong cheeses such as cheddar. I  also love making cheese toasties as a quick snack to enjoy when I’m either in a rush or feeling peckish late in the evening because dinner just wasn’t quite enough… So you can guess why I put the two together for this perfect cheese toastie or “cheese grill” as our american friends would say. Enjoying fruit and chutneys with different cheeses will always be one of my most favourite things to do!

Ingredients
-Mature aged cheddar (enough to cover sandwich twice)
-Fresh figs (thinly sliced to cover sandwich once)
-Two thickly cut slices of your favourite bread
-Butter (salted)
-Couple of sprigs of fresh thyme

Method

  1. Slice the cheese and figs thinly enough to the cover bread (double the amount of cheese as you want the figs in the middle)
  2. On a low heat, melt the butter in the pan with the thyme to infuse the butter (make sure the thyme is pushed to the side before adding the bread).
  3. Add the first slice of bread, followed by a layer of cheddar, a layer of fig and then another layer of cheddar. Finally add the last slice of bread.
  4. Once the first side of bread is golden brown, add some more butter down to melt if you need and then flip. You do not need this on a high heat as you want the filling to melt nicely without burning the bread.
  5. Enjoy!
