This soup is the perfect health kick – packed full of flavour and only 4 simple ingredients; cauliflower, leeks, mint and vegetable stock. Pure veggie power!
ingredients (serves 4)
- 1 large cauliflower
- 2 large leeks
- 1 handful of fresh mint
- 1.2L water
- 1 vegetable stock cube
- Salt and pepper to taste
- Slice the leeks and sweat down in a large saucepan on a low heat with a little oil.
- Cut off the root from the cauliflower and break down into small pieces. Add to the pan, turning it up to a medium heat. Cook for a further 3 to 4 minutes.
- Add the mint, water and stock cube. Bring to the boil and then simmer for 20 minutes.
- Blitz using a hand blender to a smooth consistency and then season to taste.
