CAULIFLOWER, LEEK AND MINT SOUP

This soup is the perfect health kick – packed full of flavour and only 4 simple ingredients; cauliflower, leeks, mint and vegetable stock. Pure veggie power!

ingredients (serves 4)

    • 1 large cauliflower
    • 2 large leeks
    • 1 handful of fresh mint
    • 1.2L water
    • 1 vegetable stock cube
    • Salt and pepper to taste

 

Method

  1. Slice the leeks and sweat down in a large saucepan on a low heat with a little oil.
  2. Cut off the root from the cauliflower and break down into small pieces. Add to the pan, turning it up to a medium heat. Cook for a further 3 to 4 minutes.
  3. Add the mint, water and stock cube. Bring to the boil and then simmer for 20 minutes.
  4. Blitz using a hand blender to a smooth consistency and then season to taste.
  5. Serve!
